Well, it's Friday. Since I'm not creative enough to come up with an alternative penance, and I'm not Theologically sophisticated enough to decide what constitutes an "extra act of Charity", that means no meat or poultry today. It's also August, so I wanted something light, but filling and sustaining for dinner.
Well, since it's August, and the Queen of the House is too busy this year to put up tomato butter or can, we have a lot of tomatoes. And idea formed in my mind and I acted on it.
Tomato Tuna Toast Treats!
Two slices of whole wheat bread, toasted in the Toaster Oven on one side. Then cover the toasted side with drained and pressed tuna, sliced tomatoes seasoned with celery salt and garlic powder, topped with sharp cheese, and toasted until the cheese is melted and possibly a little bit browned.
Delicious, fast, easy, light and it doesn't heat up the house to make. It's pretty cheap too, when you grow your own tomatoes. It's worth a try next Friday.
